MEET OUR CHEF
Nobu Maruyama is a chef and cooking enthusiast. He was born and brought up in Japan and moved to Australia in 2007 to experience Australian kitchen cultures. At the beginning of his chef life, he worked at French dining hatted restaurants Blancharu, Bistro Moncur and has returned to Asian-fusion dining, worked as the Head Chef at Bar H Dining and Kuro Dining.
His passion for food led him to pursue his career, and his dream of having his own venue has come true – as a third owner (3代目) at My Zakaya.
Nobu is continually inspired and always curious to seek the freshest, local and unique ingredients when curating recipes.
Nobu believes in nourishing your body through nutrient-dense foods and a vibrant & active lifestyle. He has gone deeper and deeper into the Japanese traditional cooking techniques such as fermentation and ageing. It produces natural Umami flavour (the essence of deliciousness) and probiotics which made him more excited about cooking experiments.
His mission is to cook for individuals or groups, bring people together with food, and showcase his beautiful dishes to customers to experience Japanese culture.
